INGREDIENTS 1 1/4 c. flour 1/4 tsp. salt 1 tsp. baking powder 1 egg 2 tbsp. sugar 2/3 c. milk
PREPARATION 1. Place about 1″ of oil in a large pan and heat for about 8-10 minutes. If you have a thermometer, you would like the oil to be 375 degrees or so. Meanwhile, in a bowl, mix the flour, salt and baking powder together with a whisk. In another bowl, beat the egg and sugar until smooth. Add the milk and beat. Next, add the wet ingredients to the dry ingredients and blend well. 2. Using a funnel or simply a measuring cup, drop the batter slowly into the hot oil, working from the center to the outside in a circle overlapping and criss crossing. The batter will stay on the bottom of the pan for a moment and then spring upward to the top where it will cook while floating. 3. Allow to cook for approximately 1 minute or so. Next, using a spatula and tongs, carefully flip the funnel cake over and allow to cook on the other side for 1 minute. Remove from oil when golden. Sprinkle with powdered sugar and serve immediately.
